This isn’t a book for beginners: it lacks the quick-reference guide to plant-based pantry stables that many gateway vegan books offer. Still, the recipes range from unfussy pancakes and plant-based bowls to buckwheat bread and impressive meals, alongside cauliflower mac-and-cheese. Madden elevates perennial favorites, (e.g., avocado toast) by adding playful, creative twists like carrot bacon. The book’s substitutions for classic meat- or cheese-centered dishes won’t fool meat eaters, but this title doesn’t try to. Madden transforms traditional dishes into new experiences, vibrant with natural colors and visually stunning in ways that allude to the nonvegan originals without pretending to be them.
VERDICT A beautifully illustrated and mouthwatering compendium to add to any kitchen, although geared more to longtime vegans than to readers simply looking to add more plant-based meals to their diets.
