Vais’s debut cookbook grew from her Instagram postings and her blog,
ElaVegan. Reflecting her interests and aesthetic, it is filled with recipes that are allergy-friendly, plant-based, and customizable. Her mission, to bring accessible plant-based eating to everyone from the most casual of vegan-curious cooks to the already dedicated vegan, is fulfilled in this celebration of delicious food. From the bare basics of vegan mozzarella, gluten-free bread, and lemon vinaigrette, building up to slightly more complicated fare such as red lentil dahl, vegan shepherd’s pie, and no-bake brownie bites, there is plenty to choose from and explore. Just try not making the creamy pasta soup with cashew cream one cold, rainy winter night or make the mushroom risotto. All dishes include timings, leftover storage instructions (making this a stealth meal prep book as well), and an inset image of the ingredient list. The Instagram worthy images of each dish also delight.
VERDICT Vais has produced a cookbook that will please foodies and have even the most skeptical omnivores coming back for seconds.
