While some one-pot cookbooks feature a specific type of cooking vessel, this new collection from the editors of
Martha Stewart Living magazine highlights several, including the Dutch oven, slow cooker, skillet, pressure cooker, and roasting pan. Each piece of cookware gets its own chapter, wherein the editors introduce distinctive features and cooking and purchasing tips (for instance, they prefer stovetop to electric pressure cookers). Most of the recipes that follow (e.g., linguine with tomato and basil, corned beef and cabbage, Provencal vegetable tian) have been slightly modified from versions that previously appeared in the magazine or online. The dessert chapter introduces a few bonuses, such as a blender method for making chocolate mousse.
VERDICT Useful for weeknight home cooking, this survey of one-pot preparations features consistent, classic recipes and vibrant photographs. Readers interested in the slow-cooking chapters will also enjoy Andrew Schloss's Cooking Slow.
