Food writer Woodier's 1984 classic has been revised to include updated guides to varieties and cultivars, 30 new recipes (including gluten-free options), and beautiful full-color photography. Though shorter than Amy Traverso's
The Apple Lover's Cookbook, the book is fantastically complete, offering descriptive information on apple history, selection, storage, substitutions, and cooking methods. Pies are covered, of course, but Woodier devotes much attention to unique savory preparations. Among her recipes for breakfasts, quick breads, drinks, snacks, meals, desserts, and preserves, readers will find sausage and apple omelet, sea scallops with coriander and cider sauce, apple meatloaf, and apple-apricot crumble.
VERDICT A bargain for knowledge-hungry apple lovers.
