Lawrence (
Sue Lawrence's Book of Baking) was the 1991 winner of the BBC's
MasterChef. Here, she includes 71 different recipes for such Scottish baked goods as breads, scones, cakes, biscuits, tarts, and oatcakes. Each section is headed with tips on preparation, and there are quite a few useful color photos. Although there are segments on the author and further reading, the title suffers from not having notes for Americans. Many of the ingredients are not common here or are known by different names and must be researched before purchasing: caster sugar, strong white flour, sultanas, and digestive biscuits are but a few examples. Lists of favorite suppliers or brands might have assisted in this aspect. On the plus side, amounts are given in grams and ounces, and temperatures in celsius, fahrenheit, and gas mark numbers.
VERDICT Scottish cooking books are rare, and advanced bakers, those of Scottish heritage, or anyone transplanted from across the pond will enjoy this baking bounty.
